Roasted Root Veggies

Grilling season is just around the corner! The weather is getting warmer and the nights longer. YAY!!! I love long evenings outside with the family. The husband likes anything that bleeds (gag me), the kids are up for burgers/dogs, and I like veggies (and occasionally chicken)….Just keepin’ it real for ya. I’m not vegetarian by any means, BUT I like GOOD meat. I’m not a burger/hot dog on the grill kinda girl. If I’m gonna eat meat, it better be a $35 melt in your mouth premium cut filet!

Start the Grill

I was craving roasted veggies and Creg was planning to do some sort of still mooing when took a bite meat so I started cutting!

Ingredients

*Carrot

*Sweet Potato

*Yukon Gold Potato

*Annie’s All Purpose Seasoning (It’s from our local herb farm back home in IL, but you can find a similar one here)

Cut veggies into chunks. Toss with seasoning. Cover with foil (to trap moisture). Grill until soft (or al dente).

    Those look delicious. There is something pleasantly different about veggies grilled in foil. Thanks for this appetite satisfying easy-to-follow recipe.
